By Debbie LaChusa One of the things I love most about being a solo-professional is I get to be “me.” Now, I do realize that my business is NOT me … my business coach has made sure of that. And, I do know that’s a good thing. However, one of the things I’ve realized over the past year is how important it is to just be me. To let my personality come through in my articles, my writing and my marketing. It’s funny actually, because I get more reaction from my ezine subscribers when I do this. More than when I pose a marketing question or ask for feedback or response to an article. If I talk about something personal, people connect and they write to me. I was taught this by one of my mentors, Alexandria Brown, The Ezine Queen. She related a story of how when she talked about her kitten, she got all kinds of emails from readers sharing information about their pets. So I figured I’d try it. I literally tried the same thing in one issue of my 10stepmarketing Ezine and talked about my dogs. They are after all my “co-workers” since I work out of my home and no one else is around all day. What happened? Same thing that happened to the Ezine Queen … I got emails back from readers about their pets. The nice thing was, it actually helped me to connect with more of my readers, too, which was cool. The same thing happened when I shared about my new car and my kids. And I started to realize I didn’t have to separate me from my work. And that by bringing more of me into it, I was actually connecting with more of my readers. What a relief that was for me. I could just be me and I could share more than just marketing tips; I could share about me. And that actually works better than just being the “marketing expert” all the time. The other lesson I learned was to let my passion shine through. I am one of those people who feels truly blessed to be doing work I love. I love to get up everyday and help my clients with their marketing. I love sharing what I know in the hope it will help another solo-professional be more successful. And when I hear that I’ve made a difference in someone’s business and their life, I’m overjoyed. So, when I learned to let this passion shine through, to truly market from the heart, it made a huge difference. If you graze and snack on a little here and there all day, you will not build up that chance to be extremely hungry. Instead of eating one large meal, which ends with an unbuttoning of the pants to let your extended stomach go free, try having 2 or 3 smaller meals throughout the day. Not to mention, eating smaller snacks throughout the day keeps your metabolism burning faster. Eat more vegetables with your meal. Instead of loading up the potatoes and stuffing, choose to have more vegetables with your turkey. On a calorie basis, you’re better off eating a larger serving of veggies than you are carbs like potatoes, rice, stuffing, or bread. 4. Drink a lot of water throughout the day. This will help with hunger throughout the day. Water is a great appetite suppressant and if you’re constantly sipping all day, you will not find yourself starving. 5. Go outside and be active Sitting around the house all day watching T.V., smelling the food cooking will keep you salivating and your stomach growling. Take a pre-dinner walk with the family or the dog. Go to the park, watch the kids play ball. If you’re really motivated, go for a jog/run before dinner or later in the evening. Being active will not only help burn off more calories than sitting in front of the tube, it will also keep you from being in “eating mode” from the kitchen aromas. 7. Have a smaller dessert Don’t skip dessert, just moderate it. Have a small sliver of pie with a larger serving of Fat-Free Cool Whip or other non-dairy topping. This new hobby is much like that of making your own bureau wanted to allow you to experience the culinary delights of homemade cheese. Some cheese, like cottage cheese, is rather simple to make but other cheeses may require complex equipment and procedures. If you’re thinking about making cheese at home you may want to start off with the easiest types of cheeses. It would help you in your cheese making endeavors, you can buy kits and supplies that will aid in this project. To make cottage cheese, you simply need milk, vinegar and salt. what could be easier? To make hard cheeses you need to have a culture of bacteria which will produce the acid which causes the curdling. into cottage cheese recipe below, with vinegar will cause the kernel which makes this an easy way for beginners to start making cheese. As you progress in your experience you can purchase the bacteria culture to make other types of cheese. Cottage Cheese Recipe 2% milk Vinegar Salt Put a gallon of 2% milk in a pan and heat to 190F - this will be just before the boiling point.Add one half cup of vinegar to the milk and let the mixture cool. This will produce the curds that are so well-known in cottage cheese and these will be mixed in with the whey. What you want to do, is drain off the whey so that you just have the curds and you can do this by putting the whole mixture in a colander or strainer. once you have the Kurds separated you can add salt - usually about a teaspoon but you can add to taste. Of course you can add other things to the cottage cheese like pepper, onions, garlic, cream and other spices to give you a flavor to your liking. However, you can rarely find milk that is not pasteurized in this modern society and using unpasteurized milk may be dangerous since it can contain bacteria and other organisms that are harmful to ingest. This is why the process of pasteurization was so important what was invented by Louis Pasteur as the pasteurization reheating kills all the organisms in the milk. In today’s modern cheese making procedures, one needs to buy a starter much like one does when making beer or wine. In cheese, however the starter is not the yeast but a bacteria. Since the pasteurization process eliminates the bacteria from the milk you need to effectively put this back in. In addition to the starter you also need rennet was which is an enzyme formally gleaned from cow stomachs but it’s no manufactured and can be purchased probably from the same place where you purchase your cheese starter. Wedding Reception Secrets From A Caterer: How To Store and Transport Hundreds of Appetizers

By Kathi Dameron A caterer’s wedding reception secrets can help a bride-to-be save big money on her wedding reception. Caterer’s often use their freezers to stock pile freezable wedding appetizers for their busy wedding season. Some caterers make their own appetizers. But some caterers purchase frozen appetizers from their food suppliers. Whether a caterer prepares their appetizers from scratch, as I did when I was a caterer or they purchase pre-made appetizers from a food vendor which is very common in the catering business … it is very likely that the appetizers will be stored in a freezer until the wedding weekend. Just as the freezer can be a caterer’s best friend when it comes to preparing hundreds or thousands of party foods. The freezer can also become a bride’s best friend! A freezer is one of the best investments a bride-to-be can make as she prepares for her wedding reception. By investing in a decent sized freezer, the bride will have the cold storage space that will allow her to begin amassing freezable wedding day foods, months before her wedding day. By setting aside one morning, afternoon, or evening a week a bride can begin cooking up her own wedding reception! Are you wondering how to store and transport all those delicious bite-size appetizers? My secret as a caterer was to invest in clean, empty pizza boxes. Pizza boxes are an awesome way to store, freeze, and transport hundreds and hundreds of appetizers to the wedding reception. Pizza boxes are a space saving and efficient way to store, freeze, and transport your appetizers. 1. Line the boxes with a sheet of bakery or sandwich paper. 2. Line all your appetizers up in neat rows side by side inside the lined box. Depending on the size of the appetizer, I generally was able to average between 60 to 80 wedding appetizers in a box. 3. Lay another sheet or sheets of bakery or sandwich paper on top of the appetizers. 4. Close the box. 5. Using a permanent magic marker, label the boxes in two spots. You will want to label the box for quick identification on the front side and also on the top of the box. 6. Make sure to include any special directions on the top of each box. This can be achieved with copies you can create from your computer printer or a copy machine, then cut and tape the directions to each box. 7. Wrap the box with commercial plastic wrap that can be purchased from a warehouse like Sam’s or Costco. You will want to wrap these boxes as tightly as possible. Begin by wrapping the pizza box from the bottom. Pull out a large extended length of wrap without cutting it. Then set the pizza box on top and start wrapping under and over until your box is completely secured in plastic wrap. When this is done correctly, you can literally turn the box upside down and the appetizers will not fall out of the box. As a caterer, I wrapped everything in this under, over fashion. Not only did it protect the food in the storage process, it also protected the food from accidents during transportation. 8. Put the wrapped box in the freezer and store until your wedding weekend. It is always a smart idea to monitor your freezer to be certain it is working properly. 9. If you start to run short on freezer space, get creative about places you can store food for your wedding. What about family, friends, or perhaps your church has a freezer that you can use for wedding reception storage. 10. To transport the wrapped boxes, simply stack them in clear large plastic bags. Tie the bags. This will protect the boxes of appetizers from shifting around during transportation. By all means assign this job of appetizer transport to a family member or friend. I would suggest asking a friend or family member, or hiring a staffer to be your appetizer co-ordinator for the wedding day. 11. If you have too many leftover appetizers after the wedding reception you really should not refreeze them. If you can not use them up during the weekend …why not donate them to a food bank and bless others less fortunate than yourself? Again, let a friend of family member co-ordinate the donation of excess wedding food for you. By Eric Hartwell Attunement is the process by which the Master opens the initiates crown, heart and palm chakras along with their third eye and throat chakras to pass on the technique of Reiki to the initiate and forge a link between the everlasting Universal Energy and the recipient. Reiki Attunement is an extremely spiritual experience by responding to the voice of the Divine Spirit within. You are attuning yourself with the energies of the Universe and releasing your intention to the Universe to be a healer and a medium to channel the positive vibrations of Light and Love. An attunement makes a person more psychically sensitive and facilitates the channeling of greater amounts of Reiki energy. After the Attunement all the natural centers of energy in the body star to vibrate at very high frequencies and open the recipient to a field of Higher Consciousness and sensitize the initiate to messages from Reiki spirit guides and angels during the process of Attunement.
